Chicharrones de pollo 🇵🇷🇨🇺🇩🇴 aka crispy fried chicken bites n sazón marinated in fresh sour orange juice & sazón 🔥 Ingredients Marinade: 1 pd. Boneless, skinless chicken thighs, cut into 2 inch pieces 5 garlic cloves, finely minced ¼ cup sour orange juice (use mixture of fresh lime & orange juice if you cant find sour oranges) 2 tbsp. Achiote oil (Olive oil if you don't have achiote oil) Sazón mix: ½ teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon dried oregano 1 teaspoon salt 1 teaspoon ground annatto Dredging mix: 1 ½ cup AP flour ½ cup cornstarch Salt & pepper 1 tsp. Sazon completa Instructions In a bowl, combine the chicken pieces with the minced garlic, sour orange juice, achiote oil and the homemade sazón mix / spices. Toss well, ensuring the chicken is evenly coated. Cover and refrigerate for at least 1 hour. In a large shallow dish, mix the flour, cornstarch, salt, black pepper, and sazón completa. Stir to combine. Remove the chicken from the marinade, allowing any excess liquid to drip off. Add the chicken pieces to the seasoned flour mixture, tossing until they are fully coated and set it aside. In a deep pan or Dutch oven, heat about 2 inches of oil to 350°F. Working in batches, carefully drop the coated chicken pieces into the hot oil. Fry for 5–7 minutes, turning occasionally, until golden brown and crispy. The internal temperature should reach 165°F. Transfer the fried chicken to a wire rack or paper towel-lined plate to drain excess oil and salt immediately. Serve with lime wedges.
