Ice cream sandwiches: Brown Butter Cookies 🍪: * 1 cup (2 sticks)  unsalted butter * 1 cup brown sugar * 1/2 cup granulated sugar * 2 large eggs  * 2 teaspoons vanilla extract  * 1 teaspoon baking Soda * 1 teaspoon salt * 2 and 1/2 cups all-purpose flour 1. First things first. Brown your butter. Heat a pan to medium heat and melt the butter. Then let it boil and stir around until ot turns a deep amber color.  2. Take off the heat and allow the butter to cool down. (About 20 minutes.) 3. Preheat your oven to 350°F. 4. Line a baking sheet with parchment paper. 5. Once the butter has cooled down, add the sugars, eggs, and vanilla extract to the cooled butter. Combine together. 6. Whisk the dry ingredients in a separate bowl. Then, combine the dry ingredients with the wet ingredients. BE CAREFUL NOT TO OVERMIX. 7. You can either scoop your cookies onto a baking sheet or roll them by hand.  8. Bake the cookies for 10-12 minutes. After they are baked, remove them from the oven and allow them to cool. Once they are fully cooled, put them in a storage container and place for 1-2 hours in the freezer. This helps keep the cookies firm when assembling the ice cream sandwiches.  Assembling the ice cream sandwiches: 1. Take the cookies out of the freezer and if any are stuck together, carefully pull them apart. Then, take the icecream out and evenly scoop vanilla and chocolate ice cream onto one cookie. When your done place a second cookie on top. Now you have an icecream sandwich! Repeat with the rest of the cookies.  2. I had to keep putting any ice cream sandwiches I made in the freezer, while making the rest, because they started to melt rather quickly, so I'd suggest for you to do the same thing as well.
