🍞 2 cups (240 g) all-purpose flour
🍬 ½ cup sugar (or coconut sugar for a less refined touch)
🥄 2 ½ tsp baking powder
🥄 ½ tsp baking soda
🧂 ½ tsp salt
🥥 ½ cup cold coconut oil or vegan butter, cut into chunks
🥣 1 cup sourdough discard (unfed is fine!)
🥚 1 egg (or flax egg for vegan: 1 tbsp flax + 3 tbsp water, rested 5 min)
🍦 1 tsp vanilla
🍫 ½ cup optional add-ins: berries, chocolate chips, nuts, or dried fruit Optional glaze:
🍶 1 cup powdered sugar
🥛 2–3 tbsp non-dairy milk
🍦 ½ tsp vanilla Instructions:
1️⃣ Preheat oven to 400°F (200°C) + line baking sheet with parchment.
2️⃣ Whisk flour, sugar, baking powder, baking soda, and salt.
3️⃣ Cut in coconut oil/vegan butter until crumbly.
4️⃣ Mix sourdough discard, egg, and vanilla; fold into dry ingredients.
5️⃣ Gently stir in add-ins—don’t overmix!
6️⃣ Pat dough into 1-inch thick round; cut into 8 wedges.
7️⃣ Space on baking sheet + bake 15–18 min until golden.
8️⃣ Cool slightly & drizzle with glaze if you want extra sweetness 😍
