A trick when using deli meat in a soup, you can ask them for 1/4 or 1/2 inch slices so you can cube it and it will not dry out as much. I do this when I wanna make a quick beef or ham soup for just one or two people..

Absolutely loved your soup!! Definitely a keeper! we had to sub beef broth for the chicken broth (forgot chicken broth at the grocery store) and mozzarella for the Swiss, (another failure at the grocery store......lol) but love love loved the final product!!! Can't wait to try your other recipes!
