• Heat pasteurised goat milk to approximately 22–24°C. • Add mesophilic starter culture. • Mix gently and allow to ripen. • Add diluted rennet according to the culture manufacturer’s instructions. • Cover and allow the milk to coagulate slowly. • Cut or ladle the curd gently into cheesecloth-lined moulds. • Allow whey to drain naturally. • Turn the cheese as needed. • Remove from moulds and add salt. • Refrigerate for fresh Chèvre or follow a validated controlled maturation process for aged Chèvre. 3. Chef Tips • Use fresh, good-quality goat milk. • Avoid aggressive curd handling. • Fresh Chèvre works well with herbs and spices. • Add black pepper, thyme or rosemary for flavoured varieties. • Aged goat cheese requires controlled humidity, temperature and food-safety monitoring. 4. Best Uses • Goat cheese salad • Bruschetta • Gourmet sandwiches • Stuffed chicken breast • Pizza toppings • Cheese boards • Tart fillings 5. Storage • Refrigerate at 0–4°C. • Store in an airtight food-safe container. • Use fresh homemade Chèvre within 3–4 days as a conservative guideline. Important commercial production note: Brie, Camembert and aged Chèvre require validated pasteurisation, culture, maturation, pH and microbiological controls. The recipes above are introductory formulations, not complete commercial food-safety procedures.
