@food52: Fall is creeping up so Food52 Hotline is here to show you the best way to use your apple peels and cores: apple jelly! By the way, don't worry about the seeds. There would need to be thousands of them to make you sick.
It’s a very old “no waste” recipe. It’s a great idea. You can also throw peels in the freezer till you have enough

this may be a silly question but if this is an accumulation of apple scraps how did you prevent them from oxidizing, just squeeze lemon juice on them?

Pectin is meant to reduce cholesterol. Fresh apples do not have pectin. The apple needs to be cooked but make sure not to over cook. 20 mins high is usually the max.

Quick, honest question. So you have to worry about the apple seeds? Is in not a concern becayse if how you cut the cores so the seeds aren’t exposed?

I remember when I was a kid that my grandma would buy a basket full of peaches and we would spend a day in the kitchen, peeling, pitting, cutting and canning those peaches. Then she would take the peelings and the scraps and make jelly out of them. It was delicious!

I've done this, but without the sugar, to get the apple pectin, that I then use to make a jam/jelly using another fruit or berry.

The peels have the most pectin so it's a match made in kitchen

Do you think a pure sour cherry juice would be acidic enough to replace the citrus?

I did everything you said but it didn't gel. It's been 3 days and although it looks pretty and tastes very nice it's just still liquid!
