I’ve realized it’s not really about the temperature but more about how long you have the pan at temp before you start cooking. Usually if I put it on low or medium I have to leave it on heat for like 5-7 minutes before I start cooking. Bug kitchens use these because the pan is ALWAYS on the heat so the pores are closed. Takes time for the sticky pores to close up

Let them heat up first they should be nonstick and to test out/ know when they are ready take water and lightly splash it on to the pan it should bead and roll around when ready

It’s your stove. Those convection ones that you have are nice, but they will often “turn off heat and turn back on” mid cooking. So your stainless steel pans have time to cool off or over heat. Does not keep temp. Need gas stove for best results

All you have to do is let it get hot enough before putting food in ! and get a copper scrubber for accidents - let it soak in soapy water for a little then scrub, comes right off!
