@d.lishh: For the Cookies •1 cup unsalted butter softened •¾ cup firmly packed light brown sugar •½ cup granulated sugar •2 large eggs •1 teaspoon pure vanilla extract •1 ½ cups all-purpose flour •1 teaspoon baking soda •1 teaspoon ground cinnamon •½ teaspoon salt •3 cups old fashioned oats Cream Filling •¾ cup unsalted butter softened •2 ½ cups confectioners sugar •1 teaspoon pure vanilla extract •1 tablespoon milk or half and half -Preheat oven 350° line cookie sheets with parchment paper -Cream together butter+sugars until fluffy. Add eggs+vanilla-MIX -Whisk together flour, baking soda, cinnamon+salt -slowly add flour to wet ingredients-mix -add in oats. Mix -small cookies- 1.5 TBS of dough bake 10-12 mins -rest 5 mins then move to wire rack- cool completely FILLING -beat butter a few mins -slowly add powdered sugar completely incorporate -add vanilla+milk-MIX -beat for 5 mins add more liquid if needed. -spread cream on one cookie top with the other.
