@entertaner_: Late Summer Fig Cake with Cardamom Vanilla Syrup Ingredients (24 cm springform): • 700 g fresh figs (reserve 2 for garnish) • 240 g flour • 180 g soft butter • 4 eggs • 220 g yogurt • 1 tsp bourbon vanilla extract • 50 g brown sugar • 50 g white sugar • 2 tsp baking powder (about 8 g) • 1 pinch of salt • 50 g toasted walnuts For the cardamom-vanilla syrup: • 50 g brown sugar • 50 g white sugar • 4 cardamom pods • Seeds of ½ vanilla bean + pod • 100 ml water Instructions: 1. For the syrup: bring water and both sugars to a boil, then remove from the heat. Add the cardamom pods, vanilla seeds, and the pod itself. Let infuse for at least 20 minutes, ideally throughout the baking time. Strain and set aside. 2. In a large bowl, cream together the soft butter, brown sugar, and white sugar until fluffy. 3. Add the eggs one at a time, mixing well after each addition. Stir in yogurt and vanilla extract. 4. Fold in the walnuts, then sift in flour, baking powder, and salt. Mix until just combined. 5. Halve the figs - Gently fold them into the batter along with half of the syrup. 6. Pour the batter into the prepared springform, smooth the top, sprinkle some brown sugar and bake for 40–45 mins at 180°C, or until a skewer inserted into the center comes out clean. 7. Let the cake cool slightly in the tin before transferring to a rack. 8. Serve with a spoonful of skyr, a drizzle of the remaining syrup, and fresh fig wedges for garnish. #e#easybakings#seasonalfooddesserts
