Creamy Garlic Herb Slow Cooker Beef Roast Ingredients 1. Beef chuck roast – 4 lb 2. Yellow onion – 1 large, sliced 3. Garlic – 7 cloves, minced 4. Olive oil – 2 tbsp 5. Unsalted butter – 3 tbsp 6. Beef broth – 1 1/2 cups 7. Heavy cream – 1 cup 8. Cream cheese – 4 oz, softened 9. Parmesan cheese – 1/2 cup, finely grated 10. Worcestershire sauce – 1 tbsp 11. Dijon mustard – 1 tbsp 12. Dried Italian seasoning – 2 tsp 13. Dried thyme – 1 tsp 14. Garlic powder – 1 tsp 15. Black pepper – 1 tsp 16. Kosher salt – 1 1/2 tsp 17. Red pepper flakes – 1/4 tsp 18. Fresh parsley – 2 tbsp, chopped Recipe 1. Pat the beef roast completely dry with paper towels. Season all sides generously with kosher salt, black pepper, garlic powder, Italian seasoning, and dried thyme. 2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned roast and sear for 3 to 4 minutes per side until a dark golden-brown crust forms. 3. Transfer the browned roast to a slow cooker. Scatter the sliced onion and half of the minced garlic around the beef. 4. Melt the butter in the same skillet over medium heat. Add the remaining garlic and cook for 30 to 45 seconds until fragrant, taking care not to let it burn. 5.
