in this video there are two types of rice paper: the bigger one is the most common rice paper, called "bánh tráng", and the 'sticky' one inside is bánh phở (yup that's the original shape of the noodles in phở). these two can be eaten right away and no need to soften with water. there's another type which has black sesame seeds and needs to be softened, it's usually used in bánh tráng cuốn thịt heo (rice paper rolled with boiled pork), a popular dish in Da Nang

The rice paper in the video is rice paper dried in the morning dew, this type is not exported. You should buy the thin rectangular rice paper, the type that is not soaked in water, just make sure the vegetables are moist. This type of rice paper is usually produced in Tay Ninh province, commonly the Tan Nhien brand.
