@lydmama: SOURDOUGH CINNAMON ROLLS The Dough 200 g active sourdough starter 170 g warm water 180 g warm milk 45 g melted butter 100 g granulated sugar 1 tsp salt 1 beaten egg 675 g bread flour Lamination 1/4 cup softened butter Cinnamon Sugar Filling 1 cup Brown Sugar 2 tbsp Cinnamon Frosting 1/2 cup Softened butter 3 cups Powdered Sugar 2 tsp vanilla extract 1-2 tbsp Milk Make the dough In a stand mixer (or large mixing bowl) Combine starter, water and milk and mix with a dough whisk or flat beater if using stand mixer. Switch to a dough hook and add all remaining ingredients and allow it to knead for 5 minutes. if using a mixing bowl, mix with dough whisk until you need to switch to your hands. Knead with your hands on the counter for 5-8 minutes add more flour if it's too sticky, it should be soft but not overly sticky. Place in a big oiled bowl, cover with plastic wrap and allow to rise overnight (8-10 hours). In the morning, mix up your Cinnamon sugar filling by combining the sugar and cinnamon in a small mixing bowl. Spray a 9×13 baking dish with cooking spray (or you can use butter) On a floured surface, roll the dough out to about 1/4 inch thickness and about 16 x 12 inch rectangle. spread the 1/4c softened butter all over leaving a small space around the edges, then sprinkle the cinnamon sugar filling over the butter and press down lightly. Roll the dough up into a log long ways, and cut into about 12 rolls. Place the rolls in the prepared 9×13 glass baking dish. Cover with plastic wrap or a tea towel and allow to rise for another 1-2 hours until risen and puffy. *See notes in blog if you run out of time or want to freeze/make ahead Bake at 350° for 40-45min, check for doneness and bake longer if needed. Make the Frosting While they are baking, make your icing. Cream together the butter and half of the powdered sugar with 1 tbsp of milk. add the other half of powdered sugar and another small splash of milk, once its all together add in your vanilla and whip until it's fluffy. I use this recipe for my micro bakery I just opened 2 weeks ago, EVERYONE is saying they are the best! I make the dough in the mid morning, let rise, roll my rolls let rise as long as I can until I have to go to bed, take them out the next morning and bake! Depending on how long I let do the second rise, I sometimes take them out earlier and let rise a bit more. But these are a HIT!

Thank you so much for sharing this SD recipe. I used Discard after peek even and they came out flawless! Ooey gooey and so soft! Mine were slightly smaller so I only baked for 25-27 min(til temp was 200) and we’ve already eaten 6 of them lol And we swapped for cream cheese frosting. Delicious! Perfect cinnamon roll dough!! 🖤
