@edengrinshpan: let’s cook a weeknight dinner together - SUPER easy edition. enjoy!! x Zucchini lemon Pasta Ingredients: 1/3 cup extra virgin olive oil, plus more to finish 4 zucchini or summer squash, sliced thin 4 cloves garlic, crushed or thinly sliced 1 cup grated parmesan, plus more for finishing 1 lemon, zested and juiced 1 large handful fresh basil, plus more for finishing Sea salt for pasta water Cracked black pepper to finish Directions: Fill a large pot with water and season generously with kosher salt, then bring to a boil. In a large saucepan, heat the olive oil and add the zucchini in small batches, seasoning well with salt and pepper. You want them to caramelize while keeping their shape, so sautéing in small batches is essential. Once all the zucchini is caramelized, add it all back to the pan and add the garlic. Sauté for a couple seconds, then add the basil, parmesan, lemon zest, and lemon juice. Add the al dente pasta to the zucchini pan along with two full ladles of pasta water. Mix with a wooden spoon while the stove is on low heat, letting the starches from the pasta water form a glossy sauce that's saucy but not wet. Check for seasoning and serve immediately with more parmesan a glug of extra virgin olive oil and basil on top.
