Basically fall in cake form. 🤤🍂 Enjoy! 🫶 **Streusel** • 1/2 cup all-purpose flour • 1/3 cup brown sugar • 1 tsp cinnamon • 1/4 tsp salt • 4 tbsp cold unsalted butter, cubed **Cake** • 1 3/4 cups all-purpose flour • 1 1/2 tsp baking powder • 1/2 tsp baking soda • 1/2 tsp salt • 2 tsp pumpkin pie spice • 1/2 cup unsalted butter, softened • 3/4 cup brown sugar • 1/4 cup granulated sugar • 1/2 cup applesauce • 1 cup pumpkin puree • 1/3 cup plain Greek yogurt • 1 tsp vanilla **Optional Glaze** • 1/2 cup powdered sugar • 1–2 tbsp milk or cream • 1/2 tsp vanilla Instructions: 1. Preheat oven to 350°F. Grease or line an 8x8 pan. 2. Mix streusel flour, brown sugar, cinnamon + salt. Cut in cold butter until crumbly; refrigerate. 3. Whisk cake flour, baking powder, baking soda, salt + pumpkin pie spice. 4. Beat softened butter + sugars until fluffy. Mix in applesauce, pumpkin, Greek yogurt + vanilla. 5. Add dry ingredients and mix just until combined. 6. Spread batter into pan and top evenly with streusel. Bake 35–45 min, until a toothpick comes out clean. 7. Cool 15–20 min.
