I used a base of labneh here, which is pretty much strained plain yogurt. Think of it like it a super thick plain Greek yogurt. You can buy it at most Whole Foods, international grocery stores, or you can also swap it with a thick Greek yogurt if you’d like. . Here is how I made it: . 1.We’ll start with the base of the salad: I finely diced 2 red bell peppers, 4 persian cucumbers, 1/2 large red onion and 1 large avocado. Add them to a salad bowl. . 2.If you like olives, 1/3 cup black cured olives would be exceptional in this salad. Feel free to leave out, or sub in some toasted walnuts/pine nuts/pistachios in this recipe, too. But completely optional. . 3.Dress the salad with 3 tablespoons of a good olive oil, juice of half a lemon, a couple pinches salt, pepper, and 1/2 tbsp dried oregano. Give it a good toss, taste, and adjust. . 4.To plate it up, grab a large serving plate and spread about 1/2 cup of labneh at the base. Again, you can swap this with a thick Greek yogurt if you’d like. . 5.Spoon the salad over the labneh, then drizzle some olive oil, add some more dried oregano, and optional, add some sumac for even more flavor. .
