Sear the Chicken  * turn your stove to medium high, add oil to coat the bottom of the pan, once you see a bit of smoke coming from the pan, add in your chicken * do not overcrowd the pan ( this will give you watery chicken ) you don't want that, we're searing the chicken not steaming it.  * cook until it is brown, then flip, should cooked for a total of 6-8 minutes ( if you're worried about the chicken being raw, we'll cook it later in the curry sauce )  3. Make the Curry Sauce  * deglaze the pan with some 1-2 tbsp water, then add onion, garlic and ginger, cook for 1-2 minutes  * add tomato paste and sauté that for another 1-2 minutes before pouring in your crushed tomatoes and more water.  * add heavy cream and remaining spices, let that simmer for a few minutes before adding in your chicken. * let that all cook for about 10 minutes.  4.
