Peach Ice Cream Sandwiches  My husband has talked about the iconic peach ice cream sandwiches from the Masters for our entire relationship, so I knew I had to recreate them this year. And getting to attend the Masters for the first time made it even more special. I finally understand the hype…the tradition, the memories, the energy, and of course, the food. After trying the original, I came home determined to give it an Ansley spin. These have a thicker layer of peach ice cream and soft, chewy cookies that stay perfectly tender even when frozen (thanks to a little cream cheese and cream of tartar in the dough). I tested homemade peach ice cream, but since it’s not peach season, nothing beats a really good store-bought version here. These are officially part of our at-home Masters tradition now, and I have a feeling you’ll be making them every spring too. Recipe below or on my Substack (link in bio)! Enjoy⛳️🍑💚 Makes 9 ice cream sandwiches  Ingredients: 1/2 cup (113g) unsalted butter, softened at room temperature  2 oz (60g) full fat cream cheese, softened at room temperature  1 cup (200g) granulated sugar 2 tbsp (25g) light brown sugar 1 large egg, room temperature  1 1/2 tsp pure vanilla extract 1 3/4 cup (210g) all purpose flour 1/2 tsp baking soda 1/4 tsp cream of tartar  3/4 tsp fine sea salt  1.5 quarts peach ice cream (I used @Tillamook Peaches & Cream) Instructions: Start by making the peach ice cream slab and I recommend doing this one day in advance so that it has time to fully freeze.  Line a 9 x 13 pan with parchment paper, leaving overhang for easy removal. Spread the ice cream evenly into the pan, smoothing the top.  Freeze until completely firm, ideally overnight.  To make the sugar cookies start by preheating the oven to 375°F (190°C) and lining two baking sheets with parchment paper.  In a large bowl, cream together, butter, cream cheese, granulated, sugar, and brown sugar for about two minutes until light and fluffy.  Add the egg and vanilla and mix until combined.  In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt.  Add to the wet ingredients and mix until just combined.  Chill the dough for about 10 minutes. It will still be soft and sticky after chilling, it’s from the cream cheese, but is necessary for a soft when frozen cookie. Scoop into 2 tablespoon portions. Use lightly damp hands or a cookie scoop to help with sticking, then gently roll into balls.  Place on baking sheets about 2 inches apart. Bake for 9–10 minutes, until the edges are set and lightly golden, but the centers are still soft.  As soon as they come out of the oven, tap the pan on the counter twice and use a round cutter to scoop them into perfect circles.  Let cool on the pan for 10 minutes, then transfer to a wire rack.  Once cool, place cookies in the freezer for about 15 minutes before assembling.  To assemble the ice cream sandwiches, remove the ice cream slab from the freezer and lift it out using the parchment.  Cut 2.75 inch circles and place onto the flat side of a cookie. Top with another cookie and gently press together.  Work quickly and return each sandwich to the freezer before assembling the next.  If the cutter sticks, run it under hot water and dry it off between cuts.
