Chicken Caesar Quesadilla 🤤 Just a girl finding as many ways as possible to devour a Caesar salad and this is up there with one of my favs 🤭 make it lighter by using medallions and reduced fat cheddar or parmesan in replacement of the mozzarella 🫶🏼  ‼️Want more easy delicious recipes just like this? Grab my cookbook ‘Low-Cal Kitchen Bangers’ through the link in my bio 🖇️ Ingredients:  120g chicken breast  Salt  Pepper  2 rashers of streaky bacon  2 mini wraps  30g mozzarella grated  ½ head romaine lettuce finely chopped 30ml caesar dressing  💕Preheat the oven to 180 degrees celsius.  💕Season the chicken on both sides with salt and pepper. Bake in the oven for 12 minutes. 💕Meanwhile, grill the bacon according to packet instructions. Once cooked, roughly chop into bits. 💕Next, toss the lettuce with 20ml of the caesar dressing, set to one side.  💕Once the chicken is cooked, shred using two forks.  💕Heat a pan over medium heat. Add one of the wraps, before topping with the mozzarella. 💕Add the shredded chicken and cover with the remaining wrap. 💕 Cook for 2 minutes on each side until golden and the cheese has melted.  💕Remove from the pan and peel back the top wrap. Add ½ the bacon along with the dressed lettuce. 💕Cover again, before drizzling over the remaining sauce and scattering over the remaining bacon. Cheesy Nacho Beef Loaded Chips 🤤 Homemade chips, gooey cheese, nacho beef, all topped off with chipotle lime mayo and pico de gallo for a BANGIN' easy dinner. 🙌 ‼️Want more easy delicious recipes just like this? Grab my cookbook ‘Low-Cal Kitchen Bangers’ through the link in my bio 🖇️ Ingredients (serves 2): 550g maris piper potato, peeled into chip shapes  Tsp smoked paprika  Tsp garlic granules  Tsp dried parsley 1 red onion diced  1 large tomato diced  Handful of coriander chopped  2 and ½ tbsp lime juice  40g lighter mayo  ¼ tsp chipotle paste  250g lean beef mince  2 tbsp taco seasoning  40g nacho cheese dip  100ml water  60g mozzarella grated  💕Start by patting the potato dry before seasoning with the smoked paprika, garlic granules and parsley. Air fry for 20 minutes at 200 degrees celsius. Shake throughout. 💕Next, make the pico de gallo by mixing ½ the red onion, tomato, coriander and 2 tbsp lime juice together, set to one side.  💕Afterward, make the chipotle sauce, by combining the mayo, chipotle paste and a ½ tbsp lime juice together. Set to one side.  💕Add a pan to medium heat. Add the beef mince frying for 4-5 minutes until almost browned, then add the other ½ onion for a couple of minutes until soft and the beef has cooked.  💕Season with the taco seasoning and add in the nacho dip and water.
