Clean & Season Goat Meat * Rinse and soak goat meat in vinegar and lime/lemon water. * Pat dry. Add to a large bowl or food-safe tub. * Season with 4.5 cups Jamaican curry powder,cumin, allspice, salt, pepper. * Massage thoroughly to coat. 2. Burn Curry & Brown Meat * In batches, heat oil in large stockpots or braising pans over medium-high heat. * Add a few tablespoons of oil and 1 tablespoon curry powder per batch. * “Burn” the curry in oil until fragrant and brown (about 30–45 sec). * Sear goat meat in batches for 2–3 min per side. * Transfer browned meat to trays or large pans. Repeat with more oil/curry powder as needed. 3. Sauté Aromatics * In the same pots, reduce heat to medium. * Add onions, Spring onion, garlic, ginger, thyme, and tomato paste. * Sauté for 5 minutes, scraping up brown bits. 4. Build the Stew * Add all browned goat meat back into the pots. * Pour in chicken stock – meat should be mostly submerged (add water if needed). * Add whole Scotch Bonnet peppers (uncut). * Stir gently to combine. Cover and bring to a simmer. 5. Slow Cook * Simmer on low for 2.5 to 3 hours, checking every 30 min and stirring gently. * Meat should be tender and nearly falling apart. 6. Add Potatoes * Add potatoes and stir in gently.
