 My family’s Torshi Makhlut recipe. It’s been made the same way for years and honestly, I wouldn’t change a thing! As a child, I spent hours sitting on the ground, making this with my grandma. This is a FULL batch. The kind you make once and eat all winter…or share it with family and friends 🫶🏡 Ingredients: 6-8 medium carrots 1 bunch celery
1 green cabbage 1 cauliflower 4 Italian eggplants 6 jalapeños 10 serranos 3 apples 4.5L Apple Cider Vinegar 1 bunch cilantro 1 bunch dill 2 bunches tarragon 1 bunch mint 2 tbsp cumin seeds 2 tbsp nigella seeds 1/4 cup turmeric 1/2 cup Persian hogweed seeds 1/4 cup coriander seeds 1/4 cup summer savoury 30 garlic cloves 1/3 - 1/2 cup salt (to taste)  Chop the celery, carrots, cabbage, cauliflower, eggplant, jalapeños, and serranos into tiny bite-sized cubes.  Blitz the cilantro, dill, tarragon, and mint in a food processor until finely chopped. Do it in batches to keep it from getting soggy. Blitz the garlic until minced. Blitz the apples until they have a grated texture.  In a giant bowl, mix all chopped veg, herbs and garlic.  Add all spices and salt.  Pour in the vinegar and stir really well.  Let it sit for 45 mins, then mix again.  Pack tightly into jars, pressing down so everything is submerged.  Let sit in the fridge for 2 to 3 week. The longer it sits, the better it gets.
