Replying to @heartily CINNAMON ROLL BABKA RECIPE: Makes 2 babkas Ingredients : Dough: 550g of strong white flour 100g caster sugar 2.5 tsp instant yeast 4 eggs 125ml whole milk 1tsp. Salt 150g softened butter Filling: 200g softened butter 250g dark brown sugar 1tsp salt 2.5 tbsp ground cinnamon Syrup: 60g caster sugar 75g water In a stand mixer, mix the dry ingredients for the dough. Then add the eggs and milk and mix with a dough hook on a low speed for a couple of minutes until a dough starts to form. Then add the butter a spoonful at a time. Wait until the last spoonful is fully mixed in until adding the next one. Mix for a further 8-12 minutes until the dough becomes sticky but stretchy. Move to an oiled bowl then clingfilm and leave in the fridge overnight. The next day: Add all of the filling ingredients together in a bowl and whisk until it turns into a paste. Take the dough out of the fridge and out of the bowl onto a clean surface. Cut the dough into two equal parts and set one aside. Roll out the dough into a rough rectangle shape and spread on half of the filling evenly. Roll the dough into a tight log shape. Then, using a sharp knife, cut the log in half lengthways, leaving a couple of inches at the top so the two halves stay connected. Twist the two halves together with the insides showing the filling facing up. Once the whole roll is twisted, add to a loaf tin lined with parchment paper. Repeat this with the other half of the dough from earlier. Add the two loaf tins to a preheated oven at 170 c and bake for 40-45 minutes. While they are baking add the sugar and water for the syrup to a saucepan. Bring to a gentle simmer until the sugar is dissolved. Once the babkas are out of the oven, brush over the syrup while they are still hot. #cinnamonroll #babka #autumn #fall #fallbaking #Recipe #
