For the kale salad: 1 bunch green curly kale, leaves cut off the stem & chopped 1 honeycrisp apple, cored & diced 6-7 slices of bacon, cooked & crumbled ½ cup dried cranberries ⅓ cup goat cheese, crumbled Olive oil, for massaging the kale . For the vinaigrette: 2 Tbsp olive oil 2 Tbsp apple cider vinegar 2 Tbsp maple syrup Salt, to taste Cracked black pepper, to taste . 1. Whisk the vinaigrette ingredients together. 2. Add the kale leaves to a large bowl and drizzle with a splash of olive oil. Using both hands, gently massage the kale until it’s softened. 3. Add the apples, dried cranberries and bacon to the bowl with your kale and toss in your desired amount of vinaigrette. Toss until the salad is fully coated. 4.
