@samlowcooks: Kimchi Pork Stew ✨ Kimchi stew, also known as kimchi-jjigae, is a traditional Korean dish that’s surprisingly easy to make, just pork bones, kimchi, gochujang, and time to simmer into a rich, tangy broth. I keep it on rotation for meal prep, portioning it into containers so there’s always a comforting meal ready. With the chill still lingering in the air, I’ve been making this a lot lately, it’s the perfect way to stay warm and fed. (Serves 6-8) 750g pork belly (cut into chunks) 1kg pork soft bones (or spare rib) 1 tbsp salt Hot water to rinse pork bones 2 shallots or 1 onion (sliced) 12 cloves garlic (chopped) 1 carrot (cut) 3 dried shiitake mushrooms 1.5 litre water 400g kimchi and juice 120g gochujang Salt and rub the pork well in a large bowl. Soak with boiling water for 2 min, then rinse with water until clean. In a large pot with garlic, shallots and pork, simmer for 75min on low. Add carrot, shiitake, gochujang and kimchi, simmer for another 60min or until pork is tender. Taste and adjust if need. Store in containers if not eating immediately, it tastes even better the next day. I like to serve with silken tofu and rice. This is a really cool fusion take on kimchi jjigae! Also using gochujang seems like a good way to add some sweetness if desired. I like to add 가대떡 to mine both as some carbs, and to thicken and silken up the broth as it cooks together.
