![Healthy banana bread Recipe adapted from @cookieandkate Ingredients 55g milk [1/4 cup] (I use soy, oat or almond milk) 1 tbsp apple cider vinegar (or lemon juice) 75g oil [1/3 cup] (any oil you like, I use coconut oil or light olive oil) 2 eggs 165g sweetener of choice [1/2 cup] (I use half honey and half coconut sugar, or maple syrup) 225g mashed ripe bananas [1 cup] (around 2 large bananas) 1 tsp vanilla extract 1 tsp baking soda 1 1/2 tsp baking powder 1/2 tsp salt 1/2 tsp cinnamon 1/4 tsp nutmeg 110g plain flour 110g whole wheat flour (or use more plain flour, or all whole wheat) Handful walnuts, roughly chopped (optional) Handful chocolate chips, roughly chopped (optional, sugar free/dairy free if necessary) Half a banana, sliced lengthways Method Make the buttermilk; combine the milk and vinegar in a small bowl and set aside. In a medium bowl combine the rest of the wet ingredients. In a large bowl combine the dry ingredients and whisk until well combined. In a small bowl combine the walnuts and chocolate chips (or any other add-ins). Scoop out 1 tbsp from the flour mixture and mix into the add-ins. Combine all the wet and dry ingredients together. Fold in the add-ins. Pour into a lined loaf tin. Top with the banana halve and press lightly down. Bake at 180C for 15 minutes.
