Pt.9 | My fall bakery menu 🍂 Recipe below 👇🏼 Can you guys tell I’m obsessed with tiramisu yet? 😭☕️🤎 Turns out, tiramisu + cinnamon rolls is such a delicious combo. My family loved these! 💌 🤎 Ingredients: Dough * 7 g fast-acting yeast * 60 ml warm water * 180 ml warm whole milk * 50 g granulated sugar * ¼ tsp vanilla extract * 1 egg * 55 g unsalted butter, melted * 1 tsp salt * 480 g all purpose flour * 1 tsp instant espresso powder * 55 g melted butter (for brushing before baking) Filling * 80 g unsalted butter, room temp * 150 g brown sugar * 45 g caster sugar * 1½ Tbsp cinnamon * 1 Tbsp instant espresso powder Mascarpone Cream * 180 g mascarpone * 115 g heavy cream * 1 tsp vanilla extract * 90 g icing sugar, sifted * Cocoa powder, for dusting 🤎 Method 1. Combine yeast, warm water, and 1 tsp sugar. Let sit for a couple of minutes until foamy. 2. Whisk in warm milk, remaining sugar, egg, vanilla, and melted butter. 3. Add salt, flour, and espresso powder, knead until smooth and elastic (8–10 min). 4. Place dough in a greased bowl, cover, and rise 1–1.5 hr until doubled. 5. Mix filling ingredients into a smooth paste. 6. Punch down dough, roll into a rectangle and spread filling evenly over dough. 7. Roll tightly from the long side, cut rolls, and arrange in a greased pan. 8. Cover and rise 30–40 min. Preheat oven to 175°C, brush rolls with melted butter, and bake 20–25 minuntil golden. 9. Whip the mascarpone, heavy cream, icing sugar and vanilla until smooth. 10. Leave rolls to cool slightly. Pipe or spread mascarpone cream on top, then sift cocoa powder over before serving.
