I think the night Lestat came for dinner he made Paul soooo much worse. Must’ve done something to his mind. Broke him maybe?. He knew that Paul was Louis’ tether to his family and his morals. Paul made him want to be better. Try to go to church and acknowledge who he was. And with him gone and his mother disowning him there was no reason to be the “good” son. No reason not to “sin” and be a homosexual man. Paul was his conflict and Lestat had to get rid of that to fully break him.
