They don't want it through court because when they are found to be in the wrong it will set a legal precedent by which many others could use to sue and retrieve fees/fines, or avoid future fines of a similar nature.

Those services at Stansted are a mine field for fines. Same the Starbucks and McDonalds side. Evidently you get fined if you park at bucks and walk into McDonalds 😂
