Layered Pastry (Kat Kat Poğaça) Ingredients * 2 cups water (450 ml) * 1 tablespoon dry yeast (7 g) * 3 tablespoons sugar * 1 teaspoon salt * 6 cups flour (650–700 g) * 70 g butter For spreading between the dough * 150 g butter Instructions 1. Mix all the dough ingredients and knead until you have a soft dough. 2. Divide the dough into 14 equal balls. 3. Let them rest for 5 minutes. Do not let them rest longer. 4. Roll each ball out to about the size of a dessert plate. 5. Brush each round with butter and stack 2 pieces on top of each other. 6. Gently stretch the edges to form a square. 7. Roll it up into a log. 8. Place the rolls in the freezer for 30 minutes. 9. Remove from the freezer, roll them out again, and press down 3 times with a rolling pin (this helps create the flaky layers). 10. Shape as desired and place on a baking tray. 11.
