@cast_iron_chris: September is when the HEAT comes! Every year I grow hot peppers- typically Carolina Reapers, Ghost Peppers, Habaneros, and Jalapeños (this year we grew all but the Reapers) to make sauces and salsa. This is one of my favorites. I hung 2lbs of (peeled and rinsed) tomatillos, 1 large yellow onion, and 5 habaneros on the @cowboy for about an hour over oak to develop as much of a smoky flavor as possible. I quartered the onions and removed the stems from the peppers then put them in a perforated pan (with garlic cloves) on the grates to get a nice char (this was about 15 minutes). Then everything went into the blender with pepper, salt, and lemon. In the end I only used 3 of the 5 habaneros- 3 was just enough heat. Finally I mixed in freshly chopped cilantro and dug in.
