Baking above 250f or above for more than 30 minutes kills anthrax spores which is the “gold standard “ for sterilization. Higher than 250f reduces the time. You are correct about the air contaminating the jar though.

I just run mine through the dishwasher and then take them directly from the hot dishwasher. I pressure can, so it neve4 even occurred to me to sterilize.

not if I'm pressure canning no.. hot foods hot jars, cold food, cold jars.
i wash my jars in my dishwasher with a sanitze function when they need to be cleaned. once exposed to air, you got bacteria exposed to it from the air...

I wash my jars in the dishwasher after using them and then store them. When I bring them out of storage to can again. I just give a good rinse and can. It’s not like they’re down on the shelf collecting botulism. Clean counters, clean utensils, clean jars. I never reuse my lids, and the rings go thru the same dishwasher cycle as my jars and then get thrown in a bag until I use them again and removed before I store my canning.

I've also used my dishwasher. Load it up with all the jars I need and run it on a short cycle and heat dry.

My dishwasher has a heat sanitize cycle, and will hold the heat. So its great for hot pack.

I had to learn this the hard way via washing glass cups that were cold from lack of central heat into steaming hot soap water... they broke in the water and I peeled part of my thumb knuckle off bc I didn't notice till it was too late 😅 for some reason though I never thought the reason you boil the jars was for temperature matching but it definitely tracks

People literally will fight to the death that everyone needs to “sterilize” jars and everything has to be completely “sterilized”. I’m always thinking, what lab are you using? I just shake my head. Lol.
