@bosh.tv: 🌱 SMOKEY TOFU TRAYBAKE 🌿 This is the exact recipe I make almost every night. It’s the definition of a throw-together midweek meal. Roasted smokey tofu, sweet cherry tomatoes and carrots, piled on top of a fresh salad with sauerkraut and cucumber, then finished with a creamy tahini-lemon dressing. Ingredients
For the traybake: 200g cherry tomatoes 280g smoked tofu 1 onion 1 carrot 1 tbsp nutritional yeast 2 tsp BBQ seasoning Salt & pepper Olive oil spray
For the salad: 180g mixed salad ½ cucumber 2 tbsp pineapple sauerkraut 1 tbsp mixed seeds Olive oil spray
For the dressing: 2 tbsp tahini Juice of ½ lemon 1 tsp maple syrup 1 tbsp nutritional yeast 2–3 tbsp water Salt & pepper How to Make It:
1️⃣ Roast – Slice carrot, onion & tofu, toss with tomatoes, oil, seasoning & nooch. Roast at 210°C for 25 mins until golden & bursting.
2️⃣ Salad – Slice cucumber, toss with salad leaves, sauerkraut & seeds, spray lightly with oil.
3️⃣ Dressing – Whisk tahini, lemon, maple, nooch, water, salt & pepper until smooth & pourable.
4️⃣ Serve – Plate up the salad, top with roasted tofu & veg, drizzle with dressing.
