There are plenty of training Courses in the Uk if you’re interested. They will show you setting out and spacing of letters. Always keep those Chisels sharp and flat on the stone. This will help with sharper looking letters👍🏻

Use a bigger chisel from the centre line out, so the chisel hangs over the side. That will create a flat chamfered edge
