@itsmarizavillarreal: Barbecue didn’t start in Texas. It didn’t even start in the U.S. The word comes from the Taíno in the Caribbean, who called it barabicu. The Spanish recorded it as barbacoa in the 1500s, and from there it spread into Mexico where Indigenous and Afro-Indigenous people shaped it into the traditions we know today. America didn’t invent barbecue it inherited it. #IndigenousHistory #Barbacoa #CulturalTruth #MexicanHistory #AfroIndigenous
Barbecue did begin with the Taíno method of *barbacoa*, where meat was cooked on raised wooden racks over fire. But what we call barbecue today is not the same thing. Black Americans evolved it into something entirely different. We transitioned to pit cooking with hardwood coals, mastered slow smoking techniques, and developed the layered seasoning profiles that define modern barbecue. Ingredients like molasses, brown sugar, rich spice rubs, and regional sauces became central to the flavor. Barbecue also became a cornerstone of Black Southern community life, tied to church gatherings, celebrations, and cultural traditions. So while it has multiple historical influences, the barbecue we recognize today is widely credited as a Black American soul food tradition because of how deeply it was transformed and defined by Black pitmasters over generations.
