Ok so if I want to bake and mine has risen from the fridge without a feeding within 6-8 hours, do I take my 100g for the bread recipe out from there and mix? Or do I still need to feed it after the 6-8 hours of it warming up before mixing

I feed Anakin right before he goes in. When I bring him out let him rest an hour, feed him for about 3 days and he’s good. I actually really like the flavor the hooch gives.

So if I'm getting this correctly, once your starter is established, you store it in the fridge with an air-tight container. You still have to feed it once a week. And once you're ready for baking, you just take it out. It might peak by itself. If it doesn't, you have to feed it once or twice until it's doubled in size. Then you use it for baking, you feed it again, and you store it again in the fridge and repeat the process when wanting to bake?

I saw a lady left her starter for over a year in the fridge. The reason you store it in the fridge is so it goes dormant. you do not have to feed once you put it to sleep only when you wake it up.

Hi! New to sour dough! I’m a little confused! So you have your giant jar of starter, then you take a little out and into another jar and add water and flour and that whole mixing then you put the lid on. Then you say discard what was in the original jar. So the giant jar that you got the starter from is now discarded? I hope I wrote that not so confusing >.<
