Cozy treats 🍁 🤎 Recipe is below 👇                                   📋Ingredients:  	•	200 g biscuits (like Digestive or Graham crackers) 	•	100 g unsalted butter (melted) 	•	300 g cream cheese (room temp) 	•	¾ cup sugar (≈150 g) 	•	2 tbsp cornstarch 	•	2 eggs 	•	1 tsp lemon juice 	•	1 tsp vanilla extract 	•	1 cup or (240 g ) whipping cream (liquid) 	•	Fresh raspberries.               2 can thick cream (170g for one )  ⸻ Instructions 1. Prepare the crust 	•	Crush the biscuits into fine crumbs (use a food processor or ziplock bag + rolling pin). 	•	Mix with the melted butter until combined. 	•	Press firmly into the bottom of a lined or greased springform pan (about 20 cm/8 inch). 	•	Chill in the fridge while you prepare the filling. 2. Make the cheesecake filling 	•	In a large bowl, beat the cream cheese until smooth and creamy. 	•	Add sugar and cornstarch, mixing until combined. 	•	Beat in the eggs  	•	Mix in lemon juice and vanilla.                                              • Pour in both the whipping cream and thick cream. Mix gently until smooth (don’t overmix). 3. Assemble 	•	Pour the cheesecake filling over the prepared crust. 	•	Tap the pan lightly to remove air bubbles. 	•	Arrange fresh raspberries evenly on top (they’ll sink slightly into the batter). 4. Bake 	•	Preheat oven to 160°C (320°F). 	•	Bake for 45–55 minutes, until the edges are set but the center is still slightly wobbly. 	•	Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour (this prevents cracks). 5. Chill 	•	Once cooled to room temperature, refrigerate for at least 4 hours (overnight is best) to set completely. 6. Serve 	•	Slice and enjoy!
