Hot Dog / Sandwich Rolls Dough: 260ml lukewarm milk (or 310ml if you’re NOT using egg) 7g instant yeast 1 x egg 1 tbs honey 500g bread flour 1 tsp salt 95g softened nearly melted butter 1 x egg yolk and 1 x tsp milk for brushing Knob of butter for brushing Whisk milk & yeast, add honey and egg and whisk again. Add the flour, salt & butter and mix well with a spatula until the flour is all combined (you can absolutely use a floured hand for this if you find it easier or give it a knead for a few minutes) fold the dough over itself turning the bowl after each fold. About 20 times (more if you’re in the groove) or until it looks like there is no lumps. Flip it over & cover and rest for 1 hour. Decompress the dough, take it out and weight it. It should way around 930-950g divide the total by 10 and cut into pieces. Weigh to the amount (mine was 94g each) if it’s too big cut a bit off and if it’s too small add a bit in. Give them a rough roll and cover so they don’t dry out. Roll each one out with a rolling pin flat and then roll them up pressing down after each one. Leave 1/4 and then stretch that bit and pull it up and over. Pinch it sealed, give it a little roll and place in a large baking dish lined with parchment paper. Also keep the ones you’ve shaped cover to prevent drying out. Cover and rest 30’min and preheat oven to 180C Brush with the egg yolk mix and bake for 15 min at 180C turn the oven down to 170C and bake for another 5-7 min. They’ll feel hard as soon as they come out but just wait 5 min and they’ll be soft as ever. For best results cool before eating. Keep covered or airtight as soon as they’re cool to stay fresh.
