@antonycookes: I had a request to try making Nigerian stew. I stumbled upon a guinea fowl, and imagined it would be a lovely way to be experiment with the recipe. Guinea fowl cooks beautifully in a stew. I went a little off-piste, baking the rice in the sauce and deep frying the breasts and wings, which might have been a needless addition. This was totally gorgeous. #nigerianstew #nigerianfood #guineafowl
