An elevated Matilda cake, for selectively lactose intolerants like moi (& vegans & eggless peeps too :P). Not to mention this cake doesn't leave you feeling icky & in a sugar coma!! Matilda Cake (vegan/dairy free, gf option) Makes 2 6iin cakes or 1 8-in cake - 1 1/2 c flour (sub @King Arthur Baking Measure for Measure flour if gluten free) - 1/4 c cocoa powder (@Modern Mountain Baking Company ) - 1 tsp baking soda - 1/2 tsp salt - 1 c sugar minus 2 tbsp sugar (If you want less sweet)  - 1 c df milk - 1/3 c oil (@benissimooils avocado oil) - 1 tbsp white vinegar - 1 tbsp vanilla extract - Chocolate frosting: 1 1/2 c butter, 1 1/2 - 2 c powdered sugar (adjust to taste/sweetness preference),  dash of vanilla, 2/3 c cocoa powder, 2 tbsp milk (adjust to consistency preference). - Chocolate ganache: Make my 2 ingredient vegan ganache recipe in previous reels- you may want to double it if you want a thicker ganache filling.  - @Maldon Salt sea salt to balance out the sweetness  Process: - Preheat oven to 350 F & grease/line your 2 6 in pans.  - In a bowl, whisk together the dry ingredients; flour, black cocoa powder, baking powder, baking soda, salt & sugar.  - Make a well in the center and add the oil, plant-based milk, vanilla extract, & vinegar.  - Slowly stir until the batter is smooth & combined.  - Evenly pour the batter into your prepared pans & bake for 30 to 35 minutes, or as soon as a toothpick comes out clean when you poke the center.  - While baking, make the chocolate frosting. Please note that my frosting measurements are not exact & have been adjusted to my preference so feel free to change ingredient quantities as you desire.  - Let the cakes cool, then stack with the chocolate frosting & chocolate ganache as shown in the video. - Spread the rest of the frosting on the outside of the cake generously so that you can create the luscious swirls as I did in the videos.  - Sprinkle with sea salt as desired, slice, AND DEVOUR!!
