Recipe: Ingredients: • 500g miniature new potatoes, halved (skins on) • Oil/butter/ghee whatever you prefer • 2 tsp cumin seeds • A pinch of asafoetida • 1 heaped tsp turmeric • 1 heaped tsp Kashmiri red chilli powder • 1 green chilli, chopped • Salt, to taste • Fresh lemon juice, to garnish • Fresh coriander, to garnish • Sliced red chillies, to garnish • Chopped red onion, to garnish Method: ~Heat oil in a pan on medium heat. ~Add a pinch of hing, then 2 tsp cumin seeds. Let them splutter. ~Add the halved potatoes and mix well. ~Sprinkle in turmeric, Kashmiri red chilli, and salt. Add the chopped green chilli. ~Mix everything, cover, and cook on low-medium heat until the potatoes are tender, stirring occasionally. Open and cook towards the end so they could get crispy. ~Check salt and adjust if needed. ~Turn off the heat and squeeze over some fresh lemon juice. ~Garnish with fresh coriander, sliced red chillies, and chopped red onion.
