Let’s make this creamy coconut seafood stew 😮‍💨🔥 For the Seafood • 2 cod fillets, cut into large chunks • ½ lb shrimp, peeled & deveined • Juice of 1 lime • ½ tsp adobo seasoning • ½ tsp black pepper • ½ tsp salt • ½ tsp sazon • ¼ tsp cumin For the Stew • 1 tbsp oil or butter • ½ tsp sazon • ½ small onion, finely chopped • ½ red bell pepper, finely chopped • ½ green bell pepper, finely chopped • 1 small tomato, diced • 2 garlic cloves, minced • 1 cup unsweetened coconut milk • ⅓ cup seafood stock, chicken stock, or water • Chopped cilantro + fresh lime to finish • Salt & pepper, to taste Instructions Add the cod and shrimp to a bowl, then season with lime juice, adobo, sazon, salt, pepper, and cumin. Let marinate for 15–30 minutes. Heat oil or butter in a deep skillet over medium heat. Add sazon and let it bloom for about 30 seconds, then stir in the onion, garlic, bell peppers, and tomato. Sauté for 3–4 minutes until softened and fragrant. Pour in the coconut milk and stock, season lightly with salt and pepper, then bring to a gentle simmer. For a smoother sauce, optionally blend part of the vegetable mixture before adding the seafood. Add the cod and simmer gently for 4–5 minutes. Stir carefully, then add the shrimp and cook another 3–5 minutes until everything is tender and cooked through. Finish with fresh cilantro and lime juice, then adjust seasoning to taste. Serve over white rice or coconut rice with fried sweet plantains, avocado, or crispy tostones on the side.
