I just don’t get it. For basically the same amount of protein these folks could be using ricotta! The cheese that actually tastes good and doesn’t have a weird as hell texture

why? why? you can make it Italian style and use a better tasting cheese with almost the same amount of protein. Ricotta, and you can top it with Pecorino Romano, and that's more protein.

You can use silken tofu instead of cottage cheese, it’s creamy delicious and if you use veggie broth it’s vegan
