The bitter gourd looks intimidating, and it’s not an immediate crowd pleaser either – it needs salt, fat and cooking alongside other bold ingredients to appreciate its depth. Together with this bitter gourd and potato dish, I cooked some monkfish in the style of a Bengali fish-fry recipe I saw. I salt it, and remove some of the bitterness, then stir fry it and add it to fried onions with green chillies , salt, turmeric, ground coriander and cumin. Finally, add beaten eggs, serv hot with fresh roti. This is a Gujarati recipe
