@ninabucksner: Mini anything is my fave especially vanilla maple muffins 😮‍💨 Ingredients • 1 cup almond flour • ½ cup oat flour (I just blend oats for this!) • 2 tbsp arrowroot starch • 1 tsp baking powder • ½ tsp baking soda • ¼ tsp salt • 2 large eggs (room temp) • ⅓ cup pure maple syrup • 3 tbsp melted coconut oil or avocado oil • ¼ cup unsweetened applesauce • 3 tbsp dairy-free yogurt • 2 tsp vanilla extract Instructions 1. Preheat oven to 350°F 2. In a medium bowl whisk together almond flour, oat flour, arrowroot, baking powder, baking soda, and salt. 3. In a separate bowl, whisk eggs, maple syrup, oil, applesauce, yogurt, and vanilla until smooth. 4. Fold wet into dry gently until just combined do not overmix!! 5. Scoop batter into mini muffin cups don’t overfill! 6. Bake for 13–15 minutes, until tops are set and a toothpick comes out clean. 7. Let cool 5 minutes before removing from pan! Where did you get the coconut butter never seen or heard of it. I’m not a fan of the vegan butters due to some of the additives or gums in them. Can this be used instead like when making cookies or cakes?
