Braised Fennel with Chickpeas and Chorizo - Another Day In Paradise Ingredients. Serves 2-3 2 Fennel bulbs cut into quarters 1 cup white wine 1 cup chicken stock/ vegetable stock 1 tbsp butter 1 tbsp white wine vinegar 2 tbsp unsalted butter 1 tin chickpeas drained 100g chorizo peeled and diced 1 tbsp white wine vinegar 1/2 lemon juice Chives Evoo Salt & pepper Coat the fennel with olive oil and salt. Sear in a hot pan until golden brown on both sides (this happens quickly). Deglaze the pan with the white wine and stock - cover and leave to cook for 10 minutes or until tender. In a separate pan fry the chorizo and chickpeas until caramelised. Finish with a splash of vinegar, lemon, chives, salt, and pepper. When the fennel is tender add the butter, a splash of vinegar and mustard to the braising liquid - mix until combined. Baste the fennel with the sauce as it thickens. I normally add a splash of water and extra seasoning to stretch the sauce out before finishing. The hum in the background of the video is the washing machine. I tried and failed to remove it all afternoon - decided to post this anyway and not to let it break my (somewhat easily breakable) brain.
