Meat: -2 lbs of beef chuck roast cut into chunks -salt and pepper heavily -add olive oil to a pot on medium high heat and sear the meat in batches -Remove once all sides are seared Sauce: -1 onion chopped -2 guajillo chilies -2 Padilla chilies -2 ancho chilies -1 small can of tomato paste or 2 tomatoes -2 tbsps of minced garlic # - 2 bay leaves -cinnamon to taste -2 cups of beef broth (Remove stems and seeds from chilies) -Combine ingredients into the same pot and simmer for 5-10 minutes or until peppers and veggies are soft. -blend ingredients together well -put meat in crockpot or the same pot you’re using -strain sauce back over meat and add 4 cups of beef broth -add 1/2 of a Birria ball or to taste (based on how many lbs of meat being used) -cook in a crockpot for 4 hours on high or 8 on low or until meat is tender -Dip one side of the corn tortilla into the sauce and put on a hot pan -add Monterey Jack cheese, meat, cilantro and onions -fold and cook until crispy on both sides #birriatacos #EasyRecipe #easymeal #food #DinnerIdeas
