Rec credit: @when_ruhana_cooks (Previously known as mama taught me well) ✨A peek into my SOULful Kitchen✨ INGREDIENTS: 1 tin caramel treat 250ml fresh cream/ orley whip 3 peppermint crisp chocolates (grated) 2 pkts tennis biscuits METHOD: 1. Layer down biscuits in a large pyrex. 2. Beat fresh cream till stiff. 3. Separately beat caramel till smooth. 4. Fold the whipped cream into the caramel. 5. Fold the crushed chocolate into mousse. 6. Spread the caramel mousse onto the biscuits. 7. Sandwich closed with other biscuits. 8. Place in freezer to set. 9. Once the mousse has firmed and set like ice-cream, remove and slice into, dividing according to the biscuits. 10. If using minis, the quantities will have to be reduced. Place the filling into a piping bag. Squeeze some filling onto a mini tennis. Sandwich closed with another mini tennis.
