@ajavineyards: How we make our white wine, step by step 🍇➡️🍷     1.    Fruit → crusher-destemmer Fresh white grapes are dumped into the hopper to start the journey. The fruit moves along the chute for the first bit of gentle processing. Our destemmer separates clean berries (and any free-run juice) from the stems. Stems get left behind so the fruit stays pure. 2. Press The juice travels through the line to the press. Inside the press, we gently extract the juice. You can see it running out of the press pan—liquid gold.     3. Into Tank We pump the fresh juice into a temperature-controlled stainless steel tank.     4. Chill & settle We drop the temp so solids settle and the juice clarifies before fermentation.     5. Primary fermentation Fermentation happens cool and clean in stainless to lock in fresh aromatics and crisp texture.     6. Rack off the sediment Once fermentation is complete, we rack the wine off its sediment (lees) for clarity and polish. Rack and repeat a few times before the wine is fined, filtered and ready for bottle.     7.  Onward to bottle From here it rests, then heads toward bottling—bright, clean, and ready for your glass. ✨ Curious about any step?
