Chicken Cutlet Sandwich I was at the farm when Mama asked me if I wanted a little snack. Nothing too crazy… “How about a sandwich?” she said. 🤣 Crispy chicken cutlet, Calabrian peppers, juicy tomatoes, fresh mozzarella, peppery arugula and a little balsamic glaze… all tucked into a toasted baguette. 🇮🇹 Simple, messy, and absolutely delicious. The kind of sandwich you need two hands for! 😂 What do you think? 👇 #thatladyanna Ingredients * 2 chicken breasts, butterflied * 1 egg * ¼ cup milk * 1 cup breadcrumbs * 2 sprigs parsley, finely chopped * 1 baguette, cut into sandwich portions * 2–4 tomatoes, sliced * 2 tbsp Calabrian peppers, chopped * Fresh mozzarella, sliced * Arugula * Balsamic glaze * Olive oil * Salt & pepper * Oil, for frying Method 1. Whisk together the egg, milk, parsley, salt, and pepper. 2. Butterfly the chicken breasts, cover with plastic wrap, and gently pound to an even thickness. 3. Dip each cutlet into the egg mixture, then coat evenly with breadcrumbs, pressing firmly to adhere. 4. Fry in hot oil until golden brown and cooked through. Drain on paper towels. 5. Slice the baguette portions in half and toast cut-side down in a little olive oil. 6. Spread Calabrian peppers over both sides of the bread. Add the chicken cutlet, followed by sliced tomatoes and fresh mozzarella. 7. Season with salt, add arugula, and finish with olive oil and a drizzle of balsamic glaze. 8.
