Loaded Vegan Nachos ⠀ - tortilla chips - ground tofu “beef - vegan cheese sauce - jalapeño - red onion - guacamole Ground tofu “beef”: - 400 g tofu - oil - 4 tbsp dried mushrooms - 4 tbsp chilis in adobo sauce (or something similar) - 1 tsp ground coriander - salt - pepper Simple guacamole: - 1-2 ripe avocados - lime juice - salt - pepper Vegan cheese sauce: - 100 g cashews - 1 onion - 1 garlic clove - 1/2 tsp cumin - 6 tbsp salsa - 3 tbsp nutritional yeast - 2 tsp miso paste - 1-2 tbsp lemon juice - splash of plant milk (or water) - salt - pepper ⠀ ❶ Roughly crumble the tofu and mix with the remaining ingredients. Roast in the oven at 220°C for 25-35 minutes. ❷ Soak the cashews in hot water. ❸ Fry the onion and carrot in a little oil until they start to brown, then reduce the heat and add the garlic and cumin ❹ Blend all the ingredients for the cheese sauce in a high-speed blender until smooth. ❺ Mash the avocado with a fork and season with lime juice, salt, and pepper to taste. ❻ Layer the ingredients in 2-3 layers on a large plate and enjoy immediately. ⠀ Please tag me if you make it, I love seeing your remakes! ⠀ #veganrecipes #EasyRecipes #goodfood #plantbasedrecipes #tofu
