Sourdough isn’t just for bread, here’s how I turned it into the softest cinnamon rolls ever!! Banana Cinnamon Rolls Dough Ingredients 670 g flour 400 g milk 70 g sugar  12 g salt 120 g sourdough 1 egg + 1 yolk 1 teaspoon Vanilla 1/2 tbsp cinnamon 90 g butter Filling 4 tbsp cinnamon 160 g butter at room temperature 130 g sugar 160 g banana slices (approximately 1 1/2 bananas) -Stir all the filling ingredients (except the banana slices) and let it rest at room temperature. Frosting 6 oz cream cheese (Philadelphia) 7 tbsp butter 1 tbsp vanilla extract 1/2 small banana 1 1/2 cups powdered sugar -Stir all the ingredients until you get a smooth  mixture. Steps  1. Mix all the ingredients except the butter and let it rest for 20 minutes. 2. Continue kneading the dough (by hand or machine). Once it looks smooth, start adding the butter little by little. 3. Once the butter is well incorporated, place the dough in a container and cover it to prevent it from drying out. 4. Let the dough ferment at room temperature until it rises 50-60% of its initial size (approximately 6 hours). 5. In a separate bowl , mix all the ingredients for the filling. 6. Roll out the dough very well and place your filling on top and the banana slices ,so you can roll it up (the dough is a little sticky so put  butter on the counter and on the rolling pin). 7. cut the roll into 7-8 pieces and place them in a mold where they are close to each other, with a little space between them as they will grow. 8. Let the rolls rise for three to four hours (or until they have doubled in size) 9. Once they're ready, place them in the oven for 30-35 minutes at 320°F. 10. Once your cinnamon rolls are ready, let them cool, add the frosting, and enjoy!! Important: This dough is very delicate and it is important that the dough does not over-ferment.
